What actually changes
MKV and AVI are not the same picture in two wrappers.
H.264 or HEVC video is re-encoded to Xvid and the audio to MP3, in an AVI container those players can index.
Worth knowing first
Everything MKV was good at disappears. Subtitle tracks, chapters and secondary audio have no home in AVI, so subtitles must be burned into the picture permanently or dropped, and only one audio track survives.

How do I keep the subtitles?
Burn them in during conversion. They become part of the image and cannot be turned off afterwards.
Is there a size limit?
Old players often fail above 2 or 4 GB regardless of what AVI technically permits. Split long files.
