What actually changes
MKV and MP4 are not the same picture in two wrappers.
MKV is a very permissive container and MP4 is a strict one. If the video is H.264 or HEVC and the audio is AAC, the streams are copied over unchanged and the conversion takes seconds regardless of file size.
Worth knowing first
Subtitles are where this breaks. MKV commonly carries ASS or SSA subtitles with fonts, positioning and karaoke effects, and MP4 has no equivalent. They are either converted to plain timed text and lose all styling, or burned permanently into the picture.

Why is my MKV file not playing on my TV?
Usually the audio. Many MKVs carry DTS or FLAC, which most TVs will not decode, even though the video itself is fine.
What happens to multiple audio tracks?
MP4 can hold several, but many players only expose the first. Pick the track you want during conversion rather than relying on the player.
