What actually changes
VOB and MP4 are not the same picture in two wrappers.
The MPEG-2 program stream is decoded and re-encoded to H.264, the AC-3 audio becomes AAC, and the result is roughly a quarter of the size at the same visual quality.
Worth knowing first
DVDs split a title across several 1 GB VOB files, so converting one gives you a fragment of the film. They are also interlaced and often anamorphic, meaning the stored 720 by 480 frame is intended to display at 16:9, so a conversion that ignores the aspect flag comes out visibly squashed.

Why is my converted video stretched?
The anamorphic pixel aspect ratio was ignored. DVD stores non-square pixels, and the display aspect is metadata.
How do I get all the parts?
Convert the VOB files of a title together in order. VTS_01_1, VTS_01_2 and so on are one continuous stream.
