What actually changes
DOCX and TXT are not the same picture in two wrappers.
Everything except the characters is removed: styles, fonts, tables, images, headers, footers and revision history. What remains is the text in document order, in UTF-8.
Worth knowing first
It also strips the things people forget are in there. Tracked changes, comments, and text hidden behind a white font all resolve to either their plain content or nothing, so a TXT conversion is a reliable way to see what a document actually contains.

What happens to tables?
They flatten into lines of text. Column structure is not representable in plain text, so it is lost.
Which encoding do I get?
