    What actually changes

    JPG and TXT are not the same picture in two wrappers.

    The photo is recognised character by character and returned as plain text. Everything visual is dropped: only the reading order the engine detected survives.

    Worth knowing first

    Photographs are harder than scans, and JPEG compression is part of why. The block artefacts around letter edges look like noise to the recogniser, and uneven lighting across a curved page costs more accuracy than low resolution does. Photograph pages flat and evenly lit.

    How accurate is it?

    On a clean, flat scan our test fixture comes back at 100 percent character accuracy. On a handheld photo of a curved page, expect noticeably worse and proofread it.

    Does it keep paragraphs and columns?

    It keeps line breaks. Multi-column layouts often interleave, because the engine reads across the page rather than down each column.
