What actually changes
PNG and JPG are not the same picture in two wrappers.
PNG stores exact pixels with DEFLATE. JPEG throws away detail the eye is bad at noticing using DCT and chroma subsampling. A photographic PNG usually drops by 80 to 95 percent. Alpha is discarded.
Worth knowing first
PNG has an alpha channel and JPG does not, so transparent areas come out white. Screenshots of text suffer worst: JPEG's chroma subsampling puts coloured fringes around sharp black-on-white edges that PNG kept crisp.

When should I not convert a PNG to JPG?
Screenshots, logos, line art, anything with sharp edges or transparency. JPEG is built for photographs and makes flat colour and text look dirty.
What quality setting should I use?
85 to 90 is the usual sweet spot. Above 95 the file grows quickly for gains nobody can see; below 70 the artefacts become obvious in skies and skin.
Can I convert the JPG back to PNG later?
You can, but the discarded detail does not come back. The PNG will be a large, lossless copy of a lossy image.
