What actually changes
TIFF and JPG are not the same picture in two wrappers.
TIFF is a container that may hold uncompressed, LZW, ZIP, or even JPEG-compressed data, often at 16 bits per channel. All of that is normalised to an 8-bit RGB JPEG, which is usually a very large reduction in size.
Worth knowing first
TIFF can hold many pages in one file, and JPEG holds one image. A ten-page scanned TIFF becomes ten JPEGs, not one. If the TIFF is CMYK, it is also converted to RGB, and saturated colours will shift.

Why is my TIFF hundreds of megabytes?
Archival scans are often 600 DPI, 16-bit, and uncompressed. Those three choices multiply fast.
Will I lose scan quality?
Some, and it matters most for text. If the TIFF is a document rather than a photograph, convert it to PDF or PNG instead of JPEG.
