What actually changes
ARW and JPG are not the same picture in two wrappers.
Sony's raw sensor data is demosaiced and rendered to an 8-bit JPEG with a neutral tone curve.
Worth knowing first
Many Sony bodies default to a lossy compressed raw mode that already discards some highlight data at capture time. Converting cannot recover it, and the compression artefacts it introduces appear along very high contrast edges rather than across the whole frame.

Does the in-camera Creative Look apply?
No. Those are metadata instructions applied by Sony's own rendering. A generic converter produces a neutral result.
What about lens corrections?
Distortion and vignetting profiles are stored as metadata. A basic conversion may not apply them, so straight lines near the frame edge can bow slightly.
