What actually changes
JFIF and JPG are not the same picture in two wrappers.
Almost nothing, and that is the point. JFIF is JPEG; the name refers to the interchange header the file already carries. The conversion normalises the header and gives the file the extension the rest of the world recognises.
Worth knowing first
Because the underlying data is already JPEG, re-encoding it would cost quality for no reason. The gain here is purely that Windows, macOS and most editors key their file associations off the extension rather than the actual contents.

Can I just rename the file to .jpg?
Usually yes, and it will open. Conversion is worth it when the file also needs cleaning up, or when a batch of them came out of an email client at once.
Why did Windows save my image as .jfif?
A long-standing registry quirk in Windows mapped the image/jpeg MIME type to .jfif, so browsers and Outlook saved images with that extension.
