    What actually changes

    NEF and JPG are not the same picture in two wrappers.

    The NEF's sensor mosaic is demosaiced, white balanced and tone mapped, then written as an 8-bit JPEG. All the editing latitude of the raw file is spent at that moment, in exchange for a file anything can open.

    Worth knowing first

    Nikon's Active D-Lighting and Picture Control settings are stored as instructions in the file, not applied to the sensor data. A third-party conversion ignores them, so the JPEG can look flatter and darker in the shadows than the camera preview did.

    Should I delete the NEF afterwards?

    No. The JPEG is a one-way rendering. Any future re-edit, especially of white balance or highlights, needs the raw file.

    Do my Lightroom edits carry across?

    No. Those live in a catalogue or an XMP sidecar. A direct file conversion reads the raw data only.
