What actually changes
WAV and MP3 are not the same picture in two wrappers.
Uncompressed PCM is analysed with a psychoacoustic model and re-encoded, discarding what the ear is least likely to notice. A 50 MB WAV becomes roughly a 5 MB MP3 at 192 kbps.
Worth knowing first
This is the point at which the audio becomes lossy and stays that way. Keep the WAV as the master if any further editing is planned, because every subsequent MP3 re-encode compounds the damage.

Which bitrate is transparent?
192 to 256 kbps for music with a good encoder. Speech is fine at 96 to 128 kbps mono.
Why are WAV files so large?
There is no compression. Stereo 44.1 kHz 16-bit audio is about 10 MB per minute, whatever it contains.
Does the metadata carry across?
WAV metadata is limited and inconsistently written, so tags often need setting on the MP3 afterwards.
