What actually changes
AI and PDF are not the same picture in two wrappers.
The artwork is written as a standard PDF, keeping the vector paths. Text stays text if the fonts are embedded, and the file prints sharp at any size.
Worth knowing first
An .ai file is already PDF-compatible internally when it was saved with that option enabled, which is the default. If it was saved without it, the file has no readable PDF stream and the conversion has far less to work with.

Does the artboard become the page size?
Yes. Multiple artboards become multiple pages, in artboard order.
Are fonts included?
Embedded fonts carry across. Fonts that were only linked will be substituted, which changes the layout, so outline your type before sending files to print.
