What actually changes
EPUB and PDF are not the same picture in two wrappers.
Reflowable text is typeset into fixed pages at a chosen page size and font size. Once that happens the text no longer adapts to the screen, which is the entire trade.
Worth knowing first
You are choosing the page size on the reader's behalf, permanently. A phone-sized PDF is unusable on a desk and an A4 PDF requires constant zooming on a phone. If the destination is an e-reader rather than a printer, converting to another reflowable format is almost always better.

Do the internal links still work?
Table of contents links and footnote links usually survive as PDF link annotations, provided the EPUB used proper internal anchors.
Why does the text look cramped?
The default font size and margins are being applied to text that was written to reflow. Set them explicitly for the page size you chose.
Can I convert a DRM-protected EPUB?
No. Files from a store with DRM are encrypted and cannot be converted by any tool.
